Director of Operations, Event Coordinator  |  |  @copakeweddings

KYLEIGH ZENGEN, the Director of Operations has led The Greens and Copake Country Club team since 2013, loving every minute—from the hustle of the warm summer weekends to the winter days spent brainstorming what new idea might draw a crowd. She not only manages the daily operations, but also coordinates and executes all weddings and events at the club and our vacation rental, The Barn at Copake Lake. Her favorite parts of the job include creating vision boards for wedding couples, taste testing every new menu item several times just to be sure, and figuring out the logistics of events like the Lawn Game Olympics, with a 14th tee Martini in hand for inspiration of course!  A true highlight of her work is experiencing the instant satisfaction of wedding couples smiling on their big day and handshakes from party guests remarking on an unforgettable time spent in Copake. Kyleigh has earned Wedding Wire Couples' Choice Awards for the past several years, in addition to receiving over 30 five star reviews from past events.

Food & Beverage Manager 

Bringing over 25 years of restaurant experience to the table, newest member of The Greens team, MIKE SNYDER, has probably made more margaritas than Don Julio. He's dabbled in everything from wrangling kids as a PE teacher to working in the automotive industry, but nothing has captured his interest quite like the banter and camaraderie with co-workers and customers in the restaurant business. Mike has excelled in the fast paced and friendly atmosphere of the bar at The Greens for the past 5 years, convinced by Kyleigh that it was worth the commute from Poughkeepsie. Not only have they collaborated on several different business ventures throughout their long friendship, she was even the officiant at his wedding! His favorite day of work so far was bartending the 2nd annual Food Truck Festival last September. In this new position, he's most excited to continue to integrate the restaurant with the golf course, and tap into the potential the property has to bring joy to the entire community. 



Executive Chef

Executive Chef FREDERICK DUMLAO joined us with 23 years of experience in the kitchen. Freddie’s impressive resume as a CIA graduate coupled with his experience ranging from NYC catering, casual and fine dining restaurants, to country clubs is what first caught our eye – but his tenacity is what really intrigued us. When we asked him what inspires him when he's behind the line he shared, "I like to think I'm telling a story of where I'm from, where I've been, and who I've worked with over the years.  Combining my experience with new ideas and eclectic ingredients."



Sous Chef

With 11 years of experience, Sous Chef MARTIN "Marty" GERRITY first gained experience while working the line, and eventually graduated at the top of his class at the Culinary Institute! Marty pulls his inspiration in the kitchen from the unknowns, the classics, almost everything around him. "The thrill of prepping for dinner services, the excitement in tasting new dishes, and the satisfaction of fabricating cuts of meat and cooking with finesse, is what inspires me every day."
